| OK, the title says it all. I'm a carnivore at heart, and this is still one of my very favorite meals! 1 bunch kale 1 C green lentils 2-3 onions 2 C noodles grated Parmesan, salt, pepper to taste Thinly slice onions, caramelize them and put them aside. De-rib, chop and steam/boil kale to thoroughly cook; put aside. Cook lentils in water or broth; put aside. Cook noodles, drain, and add other ingredients. Sprinkle with sale, pepper, and Parmesan--the more cheese the better. Of course you can cook as many items at once as you are comfortable with; I tend to do the onions and lentils at the same time, and the kale and noodles while they are cooking. My husband, however, will only cook one food item at a time, hence the separation above. | |

| Alicious--It really depends on what brand you try. I like the vegan cheese from a company called Daiya. The "cheese" is made primarily from arrowroot powder and pea protein. Most other brands are heavy on the soy, which I try to avoid as much as possible. The Daiya cheese has great flavor and actually melts like real cheese. I would definitely try Daiya if you would like to give vegan cheese a go. There is also a very good brand of vegan parmesan carried in my grocery store that does have soy in it, but is a good substitute. The name is escaping me at the moment, but I will post it when I remember what it is. Some vegans will also use nutritional yeast as a substitute for cheese, as it has a naturally cheesy flavor, though I find that it works best in sauces mixed with other ingredients as opposed to on its own. | |

| The vegan parm brand is Galaxy Nutritional Foods. There are also recipes out there if you want to make your own vegan parm as well. Hope I answered your question sufficiently. | |

| Thanks! I appreciate you answering my question so thoroughly. I can't help but think there are plenty of ways to make vegan food tasty (what I mean is spicing it up so it's not always the same old thing--I'm sure that's more ignorance on my part than anything else), but I'll admit I am hard pressed as an omnivore to think of a great variety of them, so I appreciate the info. Most of my allergies are legume/fruit/veg, it's really not a diet choice I can safely make, but I do like having a better understanding of how other people eat! I was thinking about sunflower seed butter when I asked--I can't eat peanuts, but sunbutter is good in its own right, not just as a substitute. I would buy it even if I could still eat peanuts. | |

| Can you have almonds? If you can, I highly recommend Justin's maple almond butter---SO GOOD. You won't even miss peanut butter after this. | |

| This recipe does look great. I feel supported to see that others are dealing with plenty of food issues also.(I don't mean that I am happy you have food issue!) A bit of a drag, but helps to know others are out there with you! Recently had to totally stop dairy, corn, and most white potatoes-already can't eat gluten and soy. I take it on as a challenge to find great recipes, and this one looks really good. I loved the chickpea and butternut squash one-making it again tonight! | |
